Pasta cu l'aghia
- 1 jar of our Trapanese pesto 300gr
- 1 pack of our busiate 500 gr
- atturrata (toasted) breadcrumbs
- fried eggplant or potatoes
Bring a pot of salted water to the boil, cook the pasta and drain, reserving a little of the cooking water.
Combine the busiate with the Trapanese pesto and a little cooking water.
Atturrata crumb (otherwise known as "poor man's cheese"): to complete the popular traditional dish, a little breadcrumbs are toasted in a pan with a pinch of salt and pepper until golden brown.
It can be served with aubergines or fried potatoes.
It is considered a single dish with the addition of roasted sausage.
