That of rosoli is an ancient art, typical of the Sicilian tradition. The most famous and original, of roses, is the rosolio mentioned by the "gattopardo". Later various versions of rosolio were created. Fennel is a fundamental part of Sicilian dishes, but with a little alcohol it can become a tasty liqueur with a delicate and sweetish flavour. Drunk iced it can become an excellent thirst quencher.
